VINIFICATION: Sourced from four award-winning vineyards, including Tudor Hills (80%), Gunkel (20%). Partially fermented on 20% French oak staves. Throughout harvest, Winemaker Richard Batchelor worked closely with local growers and visited each vineyard to taste for maturity and ripeness to determine the precise moment to pick the fruit. Grapes were harvested during the cool hours of the morning to preserve bright fruit notes and destemmed into the press, where each lot was processed on a champagne cycle. This is a slower press cycle that is extremely gentle on the fruit ensuring optimum fruit character is preserved. The juice was kept separate and partially fermented in stainless steel tanks with French oak staves. Once fermentation was finished, this wine was blended to encapsulate the varietal character and highlight the harmony arising from the wood fermented portion.

The St. Christopher Zeller Schwarze Katz is produced in the village of Zell along Germany's Mosel River. The legend is, there was a black cat in one of the most popular cellars along the Mosel, that would each vintage aggressively guard a barrel of Zeller wine that was cellared alongside many other wine barrels. The locals and wine merchants presumed that the wine in that barrel the cat so heavily guarded was the best and most special of the vintage. The wine is a Riesling blend that is very approachable with a delightful fruitiness which is slightly sweet, a perfect pairing wine for Asian Cuisines.
